In a food processor, combine 250g roasted unsalted peanuts, 100g chopped dates, 100g chia seeds, and 50g linseeds. Blitz for 2–3 minutes until the mixture starts to clump together.

Add 2 tablespoons of warm water and blend for another minute until the mixture forms a cohesive purée that holds shape when rolled into a ball.

Transfer the mixture to a board, dividing it into 20 portions, then roll each piece into a ball.

Place 50g desiccated coconut in a small bowl along with the remaining linseeds. Roll each ball in this mixture to coat well.

- •50g/1¾oz desiccated coconut

A few useful notes
Notes
- •These balls should have a firm yet chewy texture. Store them in an airtight container in the fridge for up to a week. They can also be frozen for longer storage; simply thaw before serving.
- •If the mixture feels too dry, add a bit more warm water, one teaspoon at a time, until it binds together nicely.
